The Cacao tree grows in the Peruvian Amazon. Criollo Cacao, well-known as “The King of Cacao”, is a scarce variety product that is valued for its high quality grain with a fine aroma and flavour. Cacao is not only an ingredient, it’s also a superfood itself.

Traditionally used as a medicinal beverage, the cacao fruit is considered to be a natural stimulant with high levels of protein and antioxidants in the form of flavonoids.

Cacao is a native species of America, probably native to Western Amazonia. In Peru, cacao is cultivated in the jungle of Loreto, San Martín, Ucayali, Huánuco, Junín, Pasco, Madre de Dios, Cusco and Ayacucho.


Cacao contains phytosterols (especially beta-sitosterol) that block the absorption of dietary cholesterol. It also contains polyphenols, antioxidants that prevent atherosclerotic processes. Chocolate is a highly energetic or high-calorie food, so it is recommended in situations that require a concentrated energy intake, as in the case of athletes.

Peruvian Resourse

Our cacao criollo is harvested in Atalaya, a region in central Peru in the Ucayali department. Our small associate farmers ensure the quality of Dried Foods Peru cacao criollo.
The tropical weather of this region makes it the best place to harvest cacao criollo. Farmers harvest the crop under the organic production and sustainable chain.


Raw cacao products

Raw cacao criollo nibs are small chunks of fermented cocoa beans which were previously carefully selected, cleaned and dehydrated at a moderate temperature.
The beans are then shelled, removing its husks, and ground up and filtered into crunchy delicious nibs.
Natural raw cacao powder has 14-16% fat content and is obtained by pulverizing the broken raw cacao cake into a fine powder form.
Raw cacao butter is available.

RAW CACAO PASTE

Cacao Paste

Cacao paste is the natural product of ground nibs, which are drawn from the fruit of the Theobroma Cacao tree. Raw cacao paste (also called Cacao Liquor) is made by crushing raw cacao beans into a liquid. This liquid quickly solidifies at room temperature and the result is cacao paste.
Because no heat is used in this process, cacao paste retains its natural properties. Cacao paste is naturally about 55% cacao butter and is an extremely smooth product great for use in any chocolate recipe. If you are looking for true dark chocolate, this is it. Not 80% or 90%, but 100% pure organic cacao. No additives, sweeteners or anything else.

COCOA BUTTER

Cocoa butter is the edible, natural fat that makes up roughly half the content of dried cocoa beans. White or yellowish in colour, it has a wonderful rich flavour and is one of the key ingredients in the production of chocolate.
Its low melting point, somewhere between 32 and 35°C, accounts for its characteristically soft and creamy texture – an attribute that makes cocoa butter appealing for use in food and cosmetic products alike.
Typically, 100g of beans produce 40g of fat. Due to the extremely stable nature of cocoa butter, it is easy to store with little danger of rancidity. Picking of the fruit occurs year-round and is still done by hand today.
The pods are sliced down from the trees with machetes and are cracked open to allow the removal of the cocoa seeds. These are then placed in fermentation boxes for three to four days – a process that is essential for the chemical composition of the beans and the development of their renowned chocolate flavour. The seeds are then sun-dried on large trays or on the ground, losing much of their moisture and deepening to a reddish-brown colour. At this stage the beans are called raw cacao.
Peruvian cocoa butter is composed of cholesterol neutral fatty acids, it is perfect to consume alone or even mixed with some of our powder or agave sweetener.
It is a delicious and healthier way to enjoy the great taste of chocolate without sugars or unwanted additives.
