The cacao tree grows in the Peruvian Amazon. The Criollo Cocoa, known as “The King of Cocoa”, is a product of scarce variety that is valued for its high quality grain with fine aroma and flavor. Cocoa is not just an ingredient, it is also a superfood in itself.
Traditionally used as a medicinal drink, the cocoa fruit is considered a natural stimulant with high levels of protein and antioxidants in the form of flavonoids .
Cocoa contains phytosterols (especially beta-sitosterol) that block the absorption of dietary cholesterol. It also contains polyphenols, antioxidants that prevent atherosclerotic processes. Chocolate is a very energetic or high-calorie food, so it is recommended in situations that require a concentrated energy supply, such as in the case of athletes.
